First, I should try the DLC's and finally Legends.
Legends allows you to have big armies of brothers in one combat (27), camping, layered armor and much more.
Legends is very recommendable.
All has pros and cons but if i should give easy answer after exploring the game I think the best enjoyment I had was the second option with vanilla expanded by some tweaks and Stronghold.
Legends bring many features and stuff but at end of day it is questionable. Eg on one hand I like the armor layers (armor is nto one gear piece but consist form 5 layers you can swap, change, exclude, also enchant, etc) - it is smart and very complex system that adds a lot to game by itself. on other hand I dont know how many hours I spent just by fiddling around with different options just to match some perk prerequisities in total fatigue and so on. Similar there is tons of crafting options but not always adding soemthing useful.. you can salvage equipment for tools but you need do soeme valuation for it like when it is worthy 9of cost/gain but also opportunity and time cost) - similar with other camping options like hunting, gathering... It really add a lot complexity and features on many levels of the game. This may sound exciting but it also require dig much deeper into everything and consider much more thiungs somehow affecting the pace of game end geenral experience in good and bad.
Also Legend has balncing on its own brinign many new terirbly powerful enemies able wipe your party in no time(white werveolves... cough, cough, just google it:p but also ridiculous OP combinations on player side.
It is enjoyable and interesting? yes.. but maybe more is not always better. In generaly I would suggest only if vanilla (and "vanilla+") is not enough for you already, not at all to someone new to the game..
Magic character's from legends sorta feel like their might as well just be carrying a weird looking bow or gun to me.
Theirs a lot of mods that tweaks the vanilla game even if their last been updated in 2019 almost all of them still work with all current dlcs, you can field more battle brothers, higher chance for famed items in shops, see battle brothers stats before recruiting.
A really fun one is Stronghold adding ability to make your own settlements, can even have harbors, some mods that add more scaling so game get's harder or higher chance of champions.
But i want to talk about Manhunters. Right now i´m on Peaseant Milita, but i read many thing and made many theory crafting. I´m no why expert. Big difference to PM you can get every background! On field you need 8-9 Indebted and 7-8 masters. Many ppl try to make Indebted frontliner..what maybe not work (btw i have one Indebted in PM run and he is very good 2hander. Good stars and rollluck). Whats about to make them backliner? 2-3 star on Matt or ratt would be enough to make them thrower/gunner or Polearmer. With 7-8 very good frontline(like Hedge knights) master you can beat anything! Low health is not big issue in backline. You can also get 2 shield Indebted with good rolls and star (Barbarian Indebted) as tank...with 16 man and good dmg output tanks get mostly bored. They don´t need to tank, just keep enemy busy and stay a life.

I never ever hire expensive backgrounds no matter the origin - it is totally not needed and you cna find very very good bros in lowborn origin too that more than match more expensive ones (ofc good rolled knight > good rolled brawler.. but guess the chances and good rolled brawler still rocks)
However being able level half party only to lvl 7 is super limiting as you absically miss over 1/3 of perks and stat icnreases on those (not to mention life dont end at lvl 11.. if you elvel up bros to 18 let say, it is still additional 21 stat points).
Peasant militia has potential to be strongest party in the game, as no else can match the pure numbers they pull out (only cultists with their crazy bonus but still extra bros in field are better).. manhunters... ee, that levle limit really sucks in long game,s ame as they die instantly. Maybe its ok if you play only till first crisis but longer the game the bigger draw it is. Imho it is worst/most difficult origin in the game - exactly opposite of Militia.
Yeah really hard so I will try to use millitia, I have been having fun with Beast slayers tho, but even with that the trophy ratio sucks.
Very pity about Battle Sisters mod. I want to use it, no Legends :(
