What is the best DLC or which DLCs do you need, which makes the game better?

Warriors of the North is the best one.

All of them are good and have important content. The one that adds the least popular new enemies, Beasts & Exploration, adds some of the additional content that's most important to balance: attachments. So it's hard not to recommend any of them.

My favorite is beast and exploration - I love fighting all sort of different beasts and it brings the most variety to combat in bb.

While I adore the South brought by Blazing Deserts, I think Warriors of the North is the best DLC pound for pound, due to the origins. But as Suejak says, they all bring interesting content -- I cannot think of playing the game without any of them now.
