With that said, Warriors of the North seems to be a favorite because of the company origin options it gives, in addition to the map expansion it provides.
Blazing Deserts expands the map more, offers a few additional company origin options (though I don't know if you need WotN for them to work?), and offers the ability to hire non-combat retainers.
Beasts and Exploration expands the map and adds crafting items from beast loot drops and lots of new legendary locations.
Really, if you can afford to, buy all the DLCs in time - they all build on one another and they all work great together and really expand the game world.

Beasts will change the way you play and progress, with more gear micromanagement. It also adds Bob, and you should be scared by that.
Deserts is the coolest imo and adds new enemy mechanics, more city experiences and nicer weaponry. It also adds the potential for Wizardry in future dlc... maybe... I'm praying...
If you want to get the most out of a new game you really need all three. The backgrounds from Warriors are the most fun, and beasts and deserts shape your world in a dramatic way.
