Not sure what an "assassin build" is (it's too vague). You can do a lot of things with Assassin recruits because they are good. What are you interested in building? They have uniquely high base initiative so they have natural synergy with things like Dodge/Overwhelm if you want to go in that direction.
Archer builds have a lot of room for personal preference, but core perks would be something like Nimble and Bow Spec... and that's it really.
Then there's a bunch of other perks that can work well depending on what you like. Berserk and Frenzy are pretty common too as archers like to deal damage.

With assassins mask, robes, hyena armor attachment, good melee attack and defense, he can do a lot of work.
Archer/Throwing weapon specialist

Nice build for sniping from afar and doing a lot of damage with javelins to close targets. Also, with bags and belts you can have nets, fire/smoke/flash pots and all kinds of other items to help you out as well.
Heavy 2-Hander

Give this one heaviest armor you can find plus great sword and it will deal huge amount of damage while still having +10-25 extra melee defense from reach advantage perk.
I was thinking of making the assassin a melee character that is nigh impossible to land a hit on.
The hunter would essentially be a sniper with the potential to defend himself if someone sneaks into melee.
Southern assassin has pretty good melee attack and defense. Why would you use it as an archer? They are pretty good duelists.
And why would hunter be a "defense"/"resolve"/"fatigue" character? Back-line units don't need much resolve, with good ranged defense and nimble perk, they don't really need any other defensive perks and fatigue is definitely not very important when "berserk" allows it to use "recover" after killing an enemy.
That's how I see assassin.
