But not the crested helm? Oh my God, I did so many reloads to just get the frickin' Swan Helm...Ugh. So I should have fought against them for a better chance to get the helm?
If you dont have the ambition to be an ally of the faction you want the helmet from, just declare war on them. Eventually you fight enough of their House units, a Knight with the decorated helmet will show up.

What is this 'Crested Helm' and the 'Heraldic Armor' people speak of? Better stats or just cosmetic? Both?
Cosmetic. I wanted the Swan Crested helm pretty bad and asked people the best way to get it. They said that if you allied with nobles during the war you could. Apparently thats not true and you need to use the ambition.
No armor though and no reward from my allied faction after winning.
The Crested Helm is merely a cosmetic variant of the Full Helm with, well, a crest of a certain noble house on it. You can get it from enemy knights, at an ok-ish chance, if it isn't too badly damaged.
The Heraldic Armor is a semi-unique piece of armor that is essentially a Reinforced Mail Hauberk with a noble house's tabard slapped atop, but with 250 armor and almost the same fatigue. It's not as good as coat of scale/plate or unique, but still a good armor, and also quite pretty tbh.
