My recipe for unhold steak is as follows:
1. Lots of ranged firepower - with me it's 4 bows, 2 crossbows and 2-4 tanks holding throwing weapons
2. Focus EVERYTHING on a single unhold at one time. Absolutely no splitting attention. This way most of it's HP is gone before it even reaches melee
3. Once in melee keep on focusing attacks until dead - for me it's 1, max 2 rounds
4. While you shred 1 guy distract the others with dogs. If you can't afford to lose 2-3 dogs per unhold battle you really shouldn't be fighting multiples of them.
5. Once first one is down, focus on second. Rinse, repeat.
6. ???
7. Profit!
If you plan to take on more than 3 I'd recommend having several bros with indomitable. That stops them in their tracks. Even nimble bros.
They're pretty well balanced I think. You just aren't supposed to fight them on day 3.
I'd recommend against taking caravan missions unless you are confident you can deal with anything the game throws at you and you want to go where the caravan is headed anyway.
If you are having trouble then net spam and goblin poison can really help slow them down. This isn't a very practical solution early game when you probably don't have these things but hey, it can help if you have some.
Many range bros is good, 4 archers with war bows can down 1 before it even reaches you. Melee should have cleavers and swords, two hand them if you are confident of dropping the shield. Two hand mace can daze them making them do a lot less damage.
Tanks just spam shieldwall, unless their current Unhold is close to dying.
Tanks should not stand on or near high ground (or any advantaged terrain, unless indomitable), any other bros should not end turns next to tanks. As long as you follow these rules, Unholds will only use smash attack instead of grab&toss.
Rest of the team focus 1-2 unholds at a time with ranged and polearms (ideally 1, but it's not always feasible position-wise).
