if you start with all the good equipment you will just wreck all the early quest snowbowling it till end game.
Imagine that you can only use noble backgrounds and you can't have any archer, that could be quite challenging.
I'd say that there is still some room for adding more origins in the future but I'd also wager that the devs will want to a) make sure that no new origin is too similar to a previously introduced one and b) make sure that all the origins stick to the overall theme of "running a low-power, down-to-earth mercenary company". That excludes a lot of options that would essentially be fantasy power trips
