Definitely worth it IMHO.
I don't get benefits of headhunter for low rate of fire weapons.
Doesn't it only spread your damage to head/body? Or is headshot by crossbow powerful enough to severely injure or kill highly head-armored opponent in one shot?
It is good enough to kill in one shot, though perhaps not highly head-armoured. I would just take that over beserk if he is taking pure crossbow builds. However, I agree with Barahur. You really should make crossbowmen hybrid.

If you only have one hybrid I could see pathfinder being useful to ensure you can always move from target to target and still attack each round. Might even allow you to move and still be able to reload.

I always take Student first.
I have been thinking a lot about this lately because the hybrids having to concentrate on both range and melee attack often have the lowest attack values. Was wondering if Fast Adaptation made sense for the build for this reason.
Edit: well I guess that's not always true I suppose your three investment stats could be range, melee, and a third stat (e.g. initiative, range defense).
What 3 stats do you all usually prioritize for stars for your hybrids?
