The 9 levels are segmented into 3 areas: ruins, crypts, and castle. There is a story boss fight for each segment, where you fight a cartoon villain, like Beastor or Deadalus.
The enemies and bosses change according to level. For example, the final encounter in level 7 is always a magic golem. Level 5 is always going to have lizardmen and an introduction to acolyte casters, with elementals as the final encounter. The final level basically throws any kind of max tier dangerous enemies it wants at you. They are predictable, and you know what to expect in each level. Each room has a random assortment of enemies, and the items and perks you get are random. Sometimes you get difficult runs, because the game spawns a lot of nasty enemy synergies, and other times the rooms are full of enemies that don't help each other that much. The necrolyte is a high danger enemy, that spawns when it feels like it, and it buffs the entire segment until it dies. A necrolyte can wipe your run, if not dealt with.
I wouldn't say that every run feels like a brand new game or anything. It's a roguelite, and feels like other roguelites I have played. You find certain enemies on certain levels, and you know what you're preparing for. I have not played Gunfire, but I have played Darkest Dungeon and it draws some parallels with that game.
As for grind length: If you want to soft cap a character, it might take like 40 hours or something. That means you have 2 maxed out weapons, maxed gem slots (stats), and some maxed items and perks. Maxing out all the items and perks is not really necessary, so that's why I call it a soft cap.
