So it will take usually several websites (they are last unlocked) for a full discovery, I think more early ones has to be done.
I usually use my Founders as Lead Designers since good Visionary are really hard to come by.
NOTE: Be careful about discovering designers, since once their creativity is narrowed, they will want benefits - higher the creativity score, the demands will be larger. Since the update of Friendship and new penalties to firing employees, it can be costly to get rid of wannabe/useless Lead Designers.
Also, do not use ones that from start have less than 100%, because the Visionary is out of the question.

As for your question, I think around 2-3 products, maybe less if Operating systems. One thing to note here, since the Creativity is not discovered, the final product will get semi-random final creativity score.
Example: You assign designer to be Lead on the new project, his creativity is 55-100% range. After several projects his creativity is narrowed down to Ordinary.
HOWEVER
He might produce Inspiring product as the first one, since the creativity number is not set down and the game takes value from the 55-100% range.
As might as this seems alluring, I would strongly suggest to actually narrow down the creativity of the Designer via Contracts, and do not use undiscovered ones as Leads.
Since there is no marketing, not sequel cooldown, you can use one internal IP to just churn out sequels. 2d Tool having only 2d and System techs, you can assign a team of 4-5 possible Leads and taking turns on making the sequels.
Again, Impossible is not meant for the general game-play, so all of this is basically hacking the game. The Downside of this strategy/exploit is that your Products window is going to get clogged from all the sequels made, but hey, it's Impossible
How long does it take (How many softwares do you need to create and release) to see the change in creativity? And do they need to be the lead designer to see that change or can they be part of a team?
Every employee that has Designer role (primary/secondary) has creativity bar, but it is only used in Lead Designer position. As I already wrote, there is no exact number for the full discovery, buy I will stick with 2 full products released, with all Design phase iterations completed, it should fully discover creativity or narrow it down within 5-10% range.
Is it a hassle, depends solely on the game style. Some players do that from start, I think it's the experience from similar games, others stick with the Founders. I did it only as a challenge to myself, and to better understand that part of the game, but I can produce 5 different IPs with my single Lead Designer, which is more than enough micro and I do not bother with this.
