When you acquire Business reputation of 4*, you can hire Receptionist and you should be able to get Hosting deals, where other companies will pay you to host their software on your server.
Last introduced to the game was Digital platform, which you can develop and use it to sell software online.
I'm not 100% sure, but I think you can get Hosting deals from the Receptionist, even if you don't have digital platform of your own.
However, Hosting deals are paid cents per MB usage, so profits from this would be really low until 2000s, when it's scripted for internet usage to pick-up.
If you want to play the game this way, renting server out as a primary source of income, I would suggest starting at least in 2010.
I have always had excessive servers, maybe because I have a background working in a data center and know their value.
I specifically set up a server array for Public Hosting, Internal Hosting, SCCM and Backup (Primary & Secondary).
I also make sure there is enough solar panels on the roof to balance the electricity used.

My current year is 1981. I thought it would be easier to start in that year. It's good to know that things have changed since the video was made. They probably updated the system to make it harder to make money quickly and easily. I'll have to figure out other ways to make money. I've built a bigger server room, so I'll have to find other ways to use it. I'll probably try creating my own online shop.

I rent a single server for development only and by 1985 I will have maybe 3 of them in total.
After researching Network in 85, I build my Digital platform.
Servers are used mainly for it and for hosting deals (but as I said, they are scarce if you started in 1980).
However, since you are new, the users on Digital platform can overload the network after some time, because it will steadily rise in millions of users. If you are selling software only on your Digital platform, the spike can be hard and at some point I have sign other platforms, because server usage is so massive that I would need a complete 3 story building just for them.
Again, Digital platform will increase sales and you will get more money per each sale of digital copy (stores take flat 30% cut, but your digital platform take % that you set), so I would say you are earning more money with servers that way, than doing Hosting deals.
EDIT:
To summarize, I would either sell or put back in inventory the servers you have right now, because running costs will be high, and you actually can't utilize them until you develop your own Digital platform.
