Can you Change the price?

Can you Change the software price once it's complete and on the sale? Am I missing that some place?

I don't think you can change the price of something after it is released.

I have not figured out a way to change the price of software at all once it is in development, which is a little counter-intuitive to me.

Yeah, this should be changed. Perhaps intended as a feature but price war is common in software so it should of course be possible.
