The next best way to do it is to start a new survival game, change it to creative, then change it back to survival. All missions will go away.

You're saying two different things, so let's get that straightened out first.
The original two modes this game offered were survival and creative. Then the custom games (which includes hardcore) were introduced.
In short, no matter what type of game you chose to play, you can turn it into a creative game. The more detailed explination that I can offer according to your last post would be that you can make a custom surivival game of your choosing. Then, as soon as you land, turn the game into a creative game and then turn it off again.
To do this, hit ESC to get to the main menu while in game. One of the icons (sorry, I fotgot which one it is) on the very top should say something like Settings. In there, I think one of the very top options to choose is Creative. Check the box and ESC out of it until you get back in game play. Then do it all again and uncheck it and ESC back into game play. You should be able to play survival mode without missions now. You MAY not even need to ESC back into gameplay. You may just be able to check the Creative box and then uncheck it again. You'll know it worked when you see the red warning come up saying something about missions not being active anymore and if you are sure you want to do it.

There should be no ending now since there are no "goals" to achieve. Besides, even after completing the missions, you can still play that save as much as you want since there technically is no end to the game.
It sounds like you're new, so may I offer a bit of advice that should help you in the future especially where limited timed events are concerned. Limited Timed Events, or LTEs, are limited timed events throughout the year that will get you unique suits, visors, color schemes and hats (that provide NO benefits/advantages AT ALL). If you care to obtain these unique items, it is best if you have one save that has many resources gathered so you can more quickly beat that event and get the rewards much faster and easier.

In No Man's Sky I know it could be done in the menu, but in this game I have no idea
And what a pity that there is no ending because there are no missions in the sense that the story happens to me, even if there are no missions.

There currently is no event running... the last event ended a few days ago, there may be another event around the summer with the next update, if not then itll be the halloween event.
When an event is running you can find information about it on the Exo Request trade rocket, in the past the events have revolved around collecting various items and sending them off on the rocket, but The devs at system era are also working on making the events more interesting so this may change in future events.
The events have nothing to do with the "ending" of the game. The missions that you want to turn off are how the story is delivered, so without missions there is no story, and hence no ending. The events sometimes have text involved with them here and there which fit with the story as revealed in the missions, but they are not needed to "finish" the game.
To be very honest even with all the missions enabled the game doesn't really feel like it has an end. You find out stuff about what has happened and the world you are in, but it never really "ends". And I don't just mean because you can keep on gathering resources and building stuff that it doesn't end, but that the story the way it is doesn't really have a conclusion. The different mission lines conclude, but the game overall doesn't have a core story and so doesn't have a core ending.

My suggestion about wanting to do a hard play through is to not worry about the missions. Just don't do them, and if you happen to complete some objects just don't turn them in. That will be as hard as playing with the missions truly disabled and then on the plus side once you've built all you want to build 7 times (once one each planet), you can then choose to finish the missions as a sort of completionist checklist (since they won't be a challenge at all at that point). The only rewards you will get from the missions that make any kind of impact, especially on an otherwise "completed" game would be QT-RTG's and the snails. Trains you will have unlocked on your own via bytes and the rest is is going to be pointless filler (stuff to shred) or story stuff.
