I've played many AAA titles with far more heavy graphical needs in simple windowed borderless with zero negative effects to quality nor speed.
So why is this such a big deal for you?
There is a difference between an AAA game and smaller games though. AAA games are typically more optimized. A true fullscreen mode does increase performance on some systems compared to borderless window fullscreen, especially when it's not an AAA game.
Also at least for me I need to adjust the display scaling because I usually have it set to 125% because otherwise everything (in windows) is very small. This causes the game to run with a lower resolution than my native screen resolution. So I need to change the scaling each time I start the game. A true fullscreen mode wouldn't have this issue.
This is actually probably one of the very few games I have in my Steam library that doesn't have a Full Screen option. So, that's something.
Not everyone runs 15 apps in the background.. and a dedicated fullscreen is a much more stable platform than windowed.
However, steam overlay is buggy as hell with fullscreen in some games.. so really having to pick n choose depending on game is often an issue as well. Some games are suited to windowed some are not and resource intensive games certainly aren't. Astroneer isn't resource heavy tho, so in this case, windowed or fullscreen shouldn't really matter.
As for many "aaa" titles.. are those ARGH!!! Titles or allegedly good.. Didn't know there were many AAA games still around.
Biggest issues I have with windowed is loosing mouse control, scroll control and other control issues.. since astro doesn't use free mouselook etc or scrolls, it's not really an issue. (for me)

Need a lock cursor to window option.
Anyway, fullscreen mode locks the cursor by default. Devs, LOCK THE CURSOR... ALT-TAB exists, it's ok, you don't have to be scared of locking the cursor.
Yes it is needed.
I run 2 monitor set up and I prefer having games in full screen mode where I can lock cursor to the window. Some games don't work with Shadowplay for example when not in full screen mode, so yes it is nice to have exclusive Full Screen.
There is no dedicated fullscreen. There's only Windowed Fullscreen and just Windowed option.
I have good enough PC to run this game with no problems in such mode but it's odd to not include one ofthe most basic and standard options.
