Yes and no...
With enough planning, you could do it without taking away your own mean to walk.
That said, right now performance issues will stop you before you ever get there.

If you don't plan it out, you'll end up creating a ton of walk ways in order to reach terrain that you still have to remove. Which would greatly increase the overall time needed to accomplish your goal.

You'll still be left with the untouchable core at the end though.

Unless you found a way to use the crane and drill to drill out precisely around the core, once you go into the core area you loose all gravity, but there's still some around the edge of it, maybe enough. Maybe not..

but the amount of time required to mine out an entire planet.. you could spend years.. then get patched and have to start all over again.

So, what I would do is ask a big astroneer streamer to get a multiplayer mod, and he/she could get the people watching to join. Then they could all join and possibly mine away the planet. It might take more than one day, but the streamer could stream on the same world over and over. If you ever find someone for the job, please send me a link.
