Why they removed hostage mode?

It was removed from Ranked because some people complained that it was too "one sided" where defenders was always at the advantage.

As for quickplay, it's still there. Check your match settings. It just isn't a very popular game mode for some that they turn it off on their side so that's why there's not much hostage matches.
