To give you an idea, I probably only unlocked all of the deluxe edition operators some 150 hours into the game. It's quite a bit annoying to have to answer "I don't own him yet" when asked to fill a key role.
On the other hand, this game does have a steep learning curve, especially if you are not familiar with FPS games. I suggest that you learn a handful of ops at a time(there are quite a few), so the deluxe edition is not exactly necessary. This game is pretty different to others you have mentioned you've played.
You will love it and you will hate it, have fun.

Sorry if i repeat myself a lot or ramble, I'm just trying to offer you maximum clarity in the noob-friendliest of terms :)
TL;DR, yes it's very worth it. There will just be a steep learning curve before you can make the most use of it, because this game is not your generic CoD or BF shooter. It's more like Overwatch meets CS:GO. Your aim alone will not be enough to carry you, but the deluxe is still a big help in letting you dive right into the game.

1. Does the Deluxe edition offer anything worthwhile for the extra 2 euros?
Yes. I highly think so. It unlocks 16 operators for free, saving you a good amount of in-game currency grinding / real life money down the road to unlock them, while also giving you more play options early on. For $2 this is a huge value. Tens of thousands of in-game currency (you earn like 300 a match at most), or a decent chunk of IRL money ($25? I dunno. More than $2, for sure.)
2. What exactly are operators?
Think of them like heroes in Overwatch. They have each have a specific weapon (some have a choice between one or two others), they have a unique ability or two (some passive, some active, some reusable, some not), and some are "Defenders" while some are "Attackers", and they can only be played during respective Defending or Attacking rounds in matches. Each one has either 3 speed & 1 armor, 2 speed & 2 armor, or 1 speed & 3 armor. You can customize their attachments and secondary gadgets which are shared with other operators (things like different sights and muzzles, flashbangs or claymores, proximity alarms or bulletproof cameras, etc. etc. etc.)
3. Are they like the equivalent of classes in COD or BF games?
No.These are much more specific and defined, and capable of synergy with other operators. Where in BF you were either the ammo guy, the healer guy, the spotter guy, or the fixer guy, and in COD you're just a loadout designed for your playstyle and the most kills, this game has strategy, synergy, and tactical planning along with those things. Just watching the cameras and calling out enemy locations and actions can change a round significantly.
4. Does Deluxe Edition offer access to more weapons?
Nope. Not in the sense you can give them to other operators anyway. Each one has a specific set to choose from, so unlocking new ones gives you their weapons ONLY for that operator, almost all of which are unique and interesting. For example, Ela, a defending operator, has a semi-auto shotgun called the FO-12, and it's the only one that can mount an Extended Barrel, making it a very interesting medium range blaster imo. That doesn't make her the best Operator, just another option in your arsenal.
5. I'd really like to know what exactly i'm paying for the extra 2 euros.
Alright, if you want precise specifics, then here we go.
As of this patch, there are 59 operators in game (30 attackers and 29 defenders), and they're constantly adding more. You'll start with cheap & easy access to the ones that came with the game at launch (about 20, 10 & 10), but the newer and newer ones are more and more expensive. The deluxe edition unlocks the 8 defending operators & 8 attacking operators from the first and second season of the game, nearly doubling your play options and saving you from having to play the generic Recruit until you have some Operators unlocked. The operators unlocked with the deluxe edition include:
Attackers
1. Buck, who has a mini shotgun on the bottom of his primary weapon he can quickly use to blow away people in close range or open soft walls/hatches/floors/ceilings.
2. Blackbeard, who has a ballistic shield he can mount on his primary weapon protecting his head until broken (constantly getting nerfed tbh, not very good rn)
3. Capitao, who has a crossbow with 2 instant smoke cloud arrows and 2 pool of fire arrows.
4. Hibana, who has a pellet launcher to break precise holes in reinforced walls/hatches/barricades, etc.
5. Jackal, who has a toggleable visor to see enemy footprints and can scan them to track their current position, with longer tracking based on how recent the step is.
6. Ying, who can throw/roll/stick huge timed multi-flashbang devices while being immune to them.
7. Zofia, who has a grenade launcher with 2 explosive breach shots and 2 concussion shots
8. Dokkaebi, who can make defender's phones ring giving away their position and hack their phone after they're dead to gain access to the enemy's cameras for that round.
Defenders:
1. Frost, who can lay up to 3 bear traps that will instantly down enemies that step on them.
2. Valkyrie: who has 3 tiny throwable sticky cameras for powerful observation on the enemy.
3. Caveira, who can run very quietly and has a special pistol designed for downing rather than killing people so as to interrogate them and gain brief intel on the entire enemy team's location
4. Echo, who has 2 drones that can (kinda?) fly, spot enemies, and shoot sonic blasts to disorient enemies' vision and hearing.
5. Mira, who can make 2 one way bulletproof mirrors attached to walls
6. Lesion, who has a large number of cloaked floor needles he can throw on the ground, giving away an enemy's location while dealing DoT, preventing them from sprinting, and forcing them to stop and pull it out.
7. Ela, who has 3 sticky concussion mines and some infamous primary weapons.
8. Vigil, who can remove his image from enemy cameras, preventing his location from being given away.
Up to you if that's worth it, but when I picked this game up 560 hours of playtime ago, I was very glad I splurged the extra $2.

As far as learning curve goes, learning siege is like learning a fighting game. Most fps are just gunskill, gunskill is the easiest part of siege.
