Linux/SteamOS
Why is there no Linux version here, like on GOG?

Yeah, +1 for Linux.

If it's using ScummVM, a Linux build should be an easy out-of-box repackage. They could even use the already compiled ScummVM binaries from the ScummVM project, although I'd recommend making a custom compile specifically for this game to slim the binary with only the functions used for this game.

ScummVM works perfectly fine on linux, if you use wine or something to install the game through the windows version of steam, you should be able to play the game just fine, or take the files from another computer
Probably the best course of action to play this (and other point & click classics on Steam) would be to first install an app called ProtonUp: https://flathub.org/apps/details/net.davidotek.pupgui2

Then from ProtonUp install a tool "Roberta" (adds the latest stable ScummVM to the compatibility tool list) to play these games. Just restart Steam after installing ProtonUp.

Roberta comes from Sierra's Roberta Williams :steamhappy:

The game runs perfectly fine on proton. No issues at all. However, considering the level of effort needed for out of box Linux since it is a ScummVM repackaging of the original, it is very easy.

Honestly, I wish they had used the Amiga CDROM version of these games to repackage (better color and higher resolution) or even a bytecode recompile of the VM code and data from the higher quality originals. They could have even made a nice hybrid of the PC CDROM sound with the Amiga CDROM visuals. It might also simply be better to give us the choice of which version to download.

Even nicer would be a full remaster with modern vertex visuals. The voice overs are good quality on this game so no need to redo them, but some of the other sounds could use updating. Furthermore, compressing everything from master in modern codecs would greatly improve audio quality, size and loading times. If they use the same engine as full throttle remastered a Linux port will be trivial.

Still, they should ALSO sell the classic version.

You can use luxtorpeda to install scummvm and run the game on it, but you'll probably have to add the game folder manually.

Quite a few game file installers could do this.
Has anyone made a 3rd party steam runtime for ScummVM games yet, like they did for DOSBox?

Luxtorpeda is a 3rd party steam runtime, that downloads dosbox, scummvm, openmw, rvgl, commandergenius, and a bunch of other open source projects to run specific games natively in linux.

It works using the same Steam UI as proton and you can install it with ProtonUpQT, if you're on steam deck.

It's probably the simplest current method to get a game that could work using a linux native emulator, source port, or game engine, to do so.

Also after I wrote that comment, a luxtorpeda dev fixed the Sam and Max luxtorpeda package so it shouldn't (fingers crossed) require any additional steps.

Indeed check out ProtonUP - to easily install these commodities to Steam on Linux https://flathub.org/apps/details/net.davidotek.pupgui2

I have the game running on a debian based distro but there's no music yet voices work as expected. I have this issue using luxtorpeda and roberta. Any ideas?

Try downloading the latest ScummVM adding the game there. There are simple settings then for audio / soundcards etc. too
