You can switch between beta and public builds in the Steam Link system settings before you start streaming.
I did manage to have a go at the beta build awhile back, but I was having the same issue that ExoF had; basically if you only very very slightly move the joystick it reads it as a mouse input and a very poor one at that.
A standard Xbox One wireless bluetooth controller works fine now.
The Elite Series 2 has these mouse cursor issues (gyro? analog stick? some combination thereof?)
This *seems* like it could be part of the problem. I noticed that if I shook the controller that it would register as mouse movement. However, I think that might have something to do with the joystick moving ever so slightly as you rotate the controller around. I did the same thing where I tried to disable the gyro only to discover the Elite controller doesn't have a gyro in it (at least not that I could find), so there is no setting that lets you disable it.
I also still had the problem when I held the controller completely still and tried to use the joysticks. I know one of the features with the Elite controller is that you can actually alter how the joysticks behave. Not just their physical stiffness, but the input-to-output curve behaves (making it so the first 50% of the joystick registers a greater input, then the last 50% having a much less effect). I wonder if the way the controller handles that is causing issues with how the Link handles the controllers output.
Is using with controller with 'Steam Link' the only way you're noticing issues with the bluetooth connectivity? I only ask because I had issues with the connection dropping in the middle of Steam games recently. There's threads all over the net about the Series 2 and connectivity issues so I contacted Microsoft and explained how it was disconnecting randomly whilst playing Steam games on my laptop. They then arranged an exchange for me. After two weeks, I received a new one which 'seems' to be working fine almost a week later.
You may want to get back in touch with them again...
Now that you say that, I did also occasionally get D/Ced using it normally (ie controller to PC) AND I was playing on a SB2 so it was connected via a dedicated Xbox chip.
Hmmm...didn’t think much of it, but if it persists I think I will do something about it.
It was a pain in the ass printing off the shipping label they sent me as I don't have a printer, then a pain in the ass buying your own box and padding to send it to them in, then finding the nearest UPS dispatch point to drop it off at but all in all it took 2 weeks to get the replacement and I've had no problems after 2 weeks of use. Also, remember to remove the thumb sticks, D-PAD and the paddles before packing it.

I can connect my new X-Box Elite Series 2 controller, to my Steam Link but I cannot get it to register any of the buttons pushes. Is the X-Box Elite Series 2 compatible with the Steam Link over Bluetooth? It works okay when plugged in. Not all of the buttons are configurable.
I am beginning to regret this purchase, it doesn't work on iOS, MacOS, or apparently the Steam Link. I have no hope that Apple will ever pay attention to me but I have faith in Steam.
I can't speak about Steam Link as I've never used it. But even after a second exchange, it still does but just not as often. It seems to happen on some games more than others though. Namely Battlefield 4. If you play on a server with a bad ping, it constantly disconnects and reconnects compared to other servers. Therefore on that game, I just leave it wired.
I haven't tried connecting it wirelessly to my link in awhile, but I know that iPadOS 14 (that recently went into public beta) added support for the Series 2 controller, so Apple does seem to be paying attention to it.
