That's copypasted from the guide, with an addition of mine that I believe is required.
After defeating Cardinal Forton and meeting Mayvin at the Gilione Inn, enter the Pendrago Shrinechurch where Mayvin is conversing with a priest. Mayvin leaves, and the priest asks Sorey to deliver a thank-you gift to Mayvin.
In the Gaferis Ruins, a soldier tells you that Mayvin has already come and gone, and was headed to the Great Camelot Bridge.
After obtaining the Spiritual Power of Wind, a merchant at the Great Camelot Bridge will tell you that Mayvin is headed to the Ganglen Ruins in Westronbolt Gorge. Make sure you go to the Great Camelot Bridge as soon as the domain is lifted, before the story officially sends you there.
In the Ganglen Ruins, you finally catch up to Mayvin. He tells you to keep the gift. You obtain the attachment Fluffy Repede.
Once you speak with Mayvin in Lohgrin and he tells you to collect all of the Iris Gems, you will no longer be able to access the previous portions of this sub-event storyline.
After defeating Tiamat and discovering that Gramps’ Blessing no longer protects the Aroundight Forest, return to Lohgrin and speak with a seraph who will describe Mayvin as a beautiful female poet. Head to Trizolde Cave and approach the tomb near the entrance to learn about the previous Storyteller of Time named Mayvin from Seraph Aksha. Completing this sub-event will award you the costume Shepherd’s Outfit: Alt. Color.

As it seems it's enough to take a look for the guy in Lohgrin. I don't have this Fluffy thing Item and I never talked to Mayvin inside the church. Neither did I meet Mayvin at Ganglen Ruins.
EDIT3: Yeah yeah another Edit but that's needed... not really how ever. It's OT but I'd prefer this Alt Color Costume without the poncho. Would look even better if you ask me.
I didn't put it on for the screenshot to show that it is actually new.
Still I'm kinda confused now. It seems like there is something needed to be done to unlock the sidequest for this Outfit, still it seems not to be anything related to Mayvins Sidequest since I never did those. I just talked to him infront of the ruin next to the Earth Trial and inside Lastonbell and that was it. Besides the actuall mainstory Part at Lohgrin.
Aisuga wrote the mayvin quest here for you so you cant miss it :p just do it in NG+ to see what happens you maybe miss something
its even worth collecting all monoliths to unlock ultimate elements mystical arte if you didn't do that so far
