I usually drop to moderate or normal on boss's due to the exp drop on intense.
You need to learn his attacks, evade when he attacks then immediatly counter.
That aside, for these bosses I was sure to set everyone on attack from a distance and watch HP, I used Edna or Mikleo mainly to check manage their HP and their suicidal tendencies. I had a lot of problems with the Dark Turtlez and the Phoenix even on Hard, but as someone said running around with a low HP characters helps, enemies tend to target them mostly.
I will point out that ONLY your stat increases from herbs will actually carry over to NG+, so no point in leveling up to 200 before NG+ or worrying about getting the E-union skill for +1 stat point per level. None of those carry over.
Also, the BEST and I mean BEST place to grind for levels is Mimic Giant farming...so I guess its not really a place. You can only fight them if you are level 76+ and you encounter them by simply opening chests. Their is a good gald farming method involving them, which may be of some interest to you. You should get about 1 level per encounter until you reach lvl 100 or so.
First more stats then people have been suggesing come from levelling up, the impression I got before playing the game that most stats come from equipment but my experience has been very different, on a ng+ where you level up faster and have higher base stats due to herbs the difference will be even more pronounced.
Also each time sorey levels up he gains an AP point, the AP points do get carried over, on a ng+ he wont gain more AP points until he exceeds the level he reached previously tho.
Not to mention it seems the main source of progressing titles as well and arte learning.
Of course eventually if you farm enough herbs you might end up maxing your stats even at level 1 in which case levelling up has less relevance but it will take some time to reach that point.
