I don't think there was a tutorial at that point, but I'm not sure.
That tend to cause immortality..or what seems like it.
I got Eizen down to critical health, and it wouldnt go down anymore. As if to say throw mud in my eye, the3 dragon heals himself up again and I cant to jack against him. That invincibility at low health is so annoying.

If there is a line saying "I know what to do about Edna...", then you can go and fight him.
Spoilertagged just in case..
During the mid/final stretch of the mountain both Edna and Zaveid temporarily
leave the party for a slightly different (but related) reason, but they come back in time
for the fight.
It was probably around that time he really begun to realize what he had to do in some cases.
He's (probably) not missable as he's related to the main questline..
- Edna and Zaveid leaving isn't a skit, but a reaction to what you do..an entirely different
reaction than the one you described.
- The skit in the inn is between Sorey and Zaveid.
I have no idea where you actually are on the questline, but you'd need to have
all Lord of the Land's first, among other things.

Just follow the questline, and you'll eventually get to him.
Alisha is essential in that war too, not to mention her "teacher" so to speak.
btw, never seen hexan isle. Do I have to complete the game a few times to unlock it? Or is it reachable on first playthrough and just a case of fulfilling all the other sidequests?
You only need to beat the final boss to access Hexen Isle. Load your clear data and there will be a portal in Artorius' Throne in the room after you go up the stairs.

When you eventually see an exclamation point on the bridge outside Ladylake, make sure
to save before you go there. Depending on difficulty level, that "enemy" can stun-lock
you to death. (I experienced it.. but then again I'm probably not very good at the game)
