Skill Stacking and Skill List
Currently I'm messing around with stacking skills in my skill list and I have a few items x2. In my skill list it only shows the skill once. If that's the cast how does this guy have so many stacked skills?

There's only 20 slots but he has close to 40 skills stacked.

He just uses double and triple skills. But if you want those are considered as a stack 2/3, you have to get the bonus grade "skills extension".

Yeah, most of that is only possible on a NewGame+, with grade bonuses. If you get the joke weapons and sanctify them into unnamed items, and then get those to +99 with the skill of your choice in the first slot and give it to the lord of the land, it then makes that skill be found at x2 all the time, even on items found in treasure chests.

For example I stacked Phoenix to 16 or more to get the Eterniti stack skill, for continuing combos so long as SC remains. If you get 15 stack along with that, then the SC cost is reduced by 50%, making Eterniti just that more useful. It's what they did in that video you posted as well, just not with the same skills, of course.

An easier way to combo skills is also through armitization and the battle action associated with it. (Forgot the name or method to obtain; you might have it already) It combines both yours and the seraph's skills and recalculates them, so if Sorey has 5 Atakk skills equipped, and so does Lailah, when armitizing you will then have the bonus of a 10 stack skill.

It takes a long time to pull all of this off, but whether you choose to do it or not depends on you.

This battle action is actually a grade bonus.
