I would actually recommend Berseria before Zestiria. The events of Berseria come before Zestiria, and what you learn from Zestiria could spoil a little bit of the Berseria story. Keep in mind, I have beaten Berseria, but still working on Zestiria, so I could be totally wrong.

Symphonia first. Afterwards, Berseria or Zestiria in whatever order.

Only Berseria and Zestiria are distantly connected due to sharing the same world. Berseria takes place 1000 years before Zestiria.

Zestiria and Berseria are disconnected enough that you can play them in either order without worry, and Symphonia is just completely its own thing. You can play them in any order you like.

With that said, I would recommend Symphonia first. Its gameplay really did not age very well, and you might find many aspects of it annoying if you go back to it after getting used to the more modern Zestiria/Berseria.

So it would make sense to plau zestiria before berseria then.

I’ve been reading a few posts and seen people saying that if I play zestiria first it could spoil some things in berseria for me.

The time period between the events of Berseria and events of Zestiria are so long that the only thing you can possibly get "spoiled" on are pieces of settings. You'll be fine playing either first.

Something that you find out in Berseria much later comes as a huge shocker that is otherwise instantly given away at the very beginning of Zestiria.

The Berseria spoiler I'm refering to:
It's how hellions are created.

I'd say Zestiria first makes more sense from a narrative perspective. Certain reveals of names and titles, artes, and ideas make have no dramatic weight to them in Berseria without playing Zestiria first. There's a major reveal of a last name for a character, NPCs talking about establishing or improving towns, a certain wind Malak, Velvet's late-game title and a bunch more I don't want to spoil.

That being said, you can play Berseria first and look back later while playing Zestiria and say "Ohhh, so THAT'S what they meant..."

Symphonia first for the older battle system may annoy you after playing the other two. Zestiria before Berseria because Eizen's story will mean much more.
