Difference between tanned fur and leather?
I just skinned an elk after tracking and killing it (first big game kill yay!) and I see that I can either tan the hide or de-fur it and turn it into leather. So what's the difference between just tanning the fur and turning it into leather? Also on a side note, what should I do with all of this meat? Can I dry it on a tree or do I need to build a house first so that I can dry it on the wall?

Last first, You can "dry" at your shelter of the weather is right. To smoke you need a building and fireplace so a town may be needed. Leather is used for cloths, rope, bandage and cord. Fur is used for cloths, bandage and cord. It takes longer to make leather than a fur, so unless you NEED leather I always do furs. Birds will tan to leather by default.

like the Privateer said leather is mostly for crafting purposes but fur is better overall (slightly heavier) and you can only dry food during the winter but smoking year round if you have a house

The main reason you would de-hair a hide other than for crafting purposes specifically requiring it (i.e leather ropes, grainflail, ski sticks) is to make leather clothing out of it. You can't make fur belts, and a lot of things will stack for more protection, like wearing fur footwear under leather shoes for example. That being said I usually don't de-hair a hide until I've gotten ~3-4 big hides tanned.
