What does GGX/GGXX/GGAC when choosing character mean?
I noticed no difference.

From GGX, GGXX, and GGAC, there are added mechanics into the game.

In GGX mode, you are not allowed to "Burst", "FRC", "Force Break", and "Slashback"

In GGXX, you are not allowed to "Force Break" and "Slashback".

There could possibly be many more differences, but I'm not entirely sure myself.

Slashback is one of the 4 types of blocking in this game, if you're wondering.

Oh disappointing, I thought it would be something better like voices/portraits from those titles - but at least now I know why I suddenly stopped being able to FRC the HS Mace.

In GG mode you can charge tension by HS+D and use IK without entering IK-mode though.

GG mode also changes how IKs work.

You hit the IK buttons and hit your opponent, and button prompts appear that the opponent has to press so as to not die.

Also Order-Sol's IK in GG mode changes to Sol's GG1 Instant Kill.

GGX also lets you use dust by hitting S+HS even though it doesn't disable the dust button itself.

GGX didn't actually have a dedicated dust button.

Each on is a throw back to a previous games' mechanics
GG mode:
allow you to jump cancel most of your normals
makes tension gain faster when your are low on health
allow you to use instant kills without going into instant kill mode
Allows you to charge your tensions by pressing HS+DUST
Instant Air Dashes can now be made much closer to the ground
So that you can charge into your opponent instead of jumping over them
without having to jump back and waiting for your character to fall
GGX mode disables your burst,FRC,Slashback and Forcebreaks
Dust is activated using S+HS
it returns a broken OTG(on the ground) system from ggx where you could OTG hit your opponent multiple times and it could not be teched
brings back FD cancel (in GGX most moves could be canceled into a sweep,
and a sweep could be canceled by activating faultless defense, giving everyone free roman cancels if you're fast enough with your keyboard/controller)
For reference see:

those are all differences as far as I'm aware
not sure on GGXX mode but I guess no Slashback and Forcebreaks
as those didn't exist in GGXX

And people said this is "old", this post is the proof how this game is the definitive edition, more than ten years of "evolution" are in this version!! As Starcraft Broodwar 1.16 is the product of 10 years of balancing. Just a few games have the privilege of being in such advanced state of balance, because companies try to make everyone hype about the "new" because money releasing games every year.

It's awesome stuff, but I'd like to point out this has been in every version of Accent Core, even my PSP version had these options :P

The Wii version of vanilla AC (no plus) had Generations mode.

I know that, my point is this is the last revision, so XX AC gameplay has been balanced, then the best of GG, GGXX and GGXXAC is bundled in this.

Clear all 30 missions.
For alternative methods, see here: https://gear-project.tumblr.com/post/37271901065/how-to-unlock-everything-in-accent-core-plus

That's certain to help this guy's question, 8 years later.
