Yes. If you upgrade it enough, it processes faster. Look at the unlocks, and note that there are profit and speed boosts. Make note of which type you earn at what level through the unlocks.

Oil can be upgraded to the point where it processes as fast as Lemonade.

Also once you collect angels several times after several days or a long time, like for me it only takes 15 seconds to collect a masisve amount of money
So yes they are very much worth it

In end game with the Cupid Multiplier from the Valentines Day event, Oil Rigs are far and away the largest income per second of any of the business on Earth.

That is with over 10,000 Oil Rigs though.
