They are the ones with a bigger chance of Metal (if not the only chance).
An Iron Pick will yield you more Metal as well.
The Ankylo is also able to mine Metal (as well as other materials from rocks), if you have one. The Iron Pick is more efficient though (but requires repairs, which the Ankylo doesn't - obviously), but the Ankylo has storage in it's favor as well.

That has been the case for us at least, and that has also been what I've seen people claiming to be how it works.
