The Reason to tame each dino.
Ok so here's what I've got so far Please help me fill in the gaps.I'll edit this as I get more answers. If I missed a dino, let me know too.

Dodo: Emergency Food, can occasionally lay eggs to be eaten (same goes for all dinos)

Dilo: Decent (and small) attack dog, or as I refer to them "yard birds".

Para: Can carry some weight. Beginner mount. Poor attack and survivability. Best used in early game as an 'eat him, not me dino'.

Phio: See Para

Carbo: The first marine mount. Great Mega tank. Not as quick as the Sarco or Megalodon.

Raptor: Your trusty steed. Good damage, excellent speed / stamina. Can take a fair amount of damage.

Sarco: Can travel on land and water. Good for raiding a marine base.

Stego: Ultimate Berry Harvesting / Some thatch

Trike: Berry Harvesting / Some thatch - slower than Stego. Early base defense.

Megaladon: Water Domination

Mammoth: Wood Harvesting, grabs fair amount of berries at the same time.

Ankylo: Effectively, a mobile pickaxe, can AoE clear rocks. Grabs fair amount of berries at the same time.

Sabertooth: Powerful hunter, harvests Chitin/Keritin very well. Fastest of all mounts (Sprint + Jump for maximum effectiveness)

Carno: Faster than a Rex, More damage / Health than a raptor. Good 'all round' mount.

Bronto: Berry Harvesting (Best maybe?)

Rex: Massive amounts of carnage and laughing & Powerleveling your friends.

Pterodon: Fast flier. Can carry people.

Argentavis: Solid Flier, carries more than the Pterodon.

Spineo: While weaker than a T-Rex, it's not by much. It also attacks faster and thus, better DPS. It has the added benefit of swimming and holding its breath longer.

Trike - Berries & Thatch(little bit of wood)
Bronto - Berries & Thatch(little bit of wood)
Megaladon - useful for diving for ex. so pearls that is. Also a good dino to have for farming meats or travelling great distances or performing naval attacks.

Spino is an "offense" dino, like Rex, Carno, Raptor, Dilo etc. Good for farming meat too.

Megalodon is probably the most powerful dino in the game, so if you have a base connected to the ozean, a megalodon will be the pet to go! :D

And this horned pig, which i dont rememer the name.

EDIT: Phiomia or something was it?
Phiomia as far as people told me, it acts like a mobile semi-fridge, if you put meat inside it, it will last longer.

Argentavis is great to tame as it has a large starting stamina meaning that you can fly a long way. It is also great as it can pick up people and other dinosaurs. If you see something on a ledge of a mountain such as metal ore but you cannot get there, call your friend with an Argentavis to pick you up and drop you there.

i would never harvest berries with a stego, it is soo slow : :( i like the mammuth for wood and berries, best speed to change location and good weight,
i like the spino more than the rex, spino have a good swim speed and could follow my easily through rivers or seas and my has 780 oxy for some unterwater adventures, t rex in water is really slow

The only real benefit to a Phiomia or a Parasaur are that they can be tamed at very low level.

Yeah, they're carrier dino's since they can't/have low attack.

Argentavis: Long distance flyer that can fend for itself and carry a lot more weight than the Pterodon can.
Trike: Early game tank defence for your base, primarily against Carnos and Raptors. Slow but sturdy.
Carno: Great mount that can run long distances and deal with most inland threats. Regenerates stamina slower than Raptors, however. Good for farming prime meats.

True the Stego is slow but the mammoth can't even collect berries half as fast.

Updates made. Still not seeing a reason to tame the carno over the raptor or rex though.

Carno is better than a raptor. I'm sorry but the base life of a raptor and damage is very low. They can die very easy. On the other hand carno is a lot better more life more damage.

You shouldn't really say what's the point I can get a rex. In 1 way you're right. But have you tried to take a rex. They are a lot harder to knock out and a lot longer to tame.

I tamed 6 raptors this weekend. 4 carno. 2 sabers. 2 argentravs or whatever they are called.

But I still take my 4 carno out hunting. They can take a beating and deal a lot of damage. My main prime meat farmers atm. Soon I'll start using the bird. But need to level it up at least to 25ish

Right now, my tribe is sitting on 4 Rexs (all of which were tamed by myself and others) and 2 carnos. The rexes seem to be the go-to for pretty much everything since we got them. I'm not claiming to be an authority here. Just trying to compile the list I wish I had.

Carno fits through a dino door, rex requires a behemoth door. Rex gets killed by dilos because of the awful AI which can't fight back against really small opponents. (So do carnos sometimes, unfortunately.) If you don't have a base large enough for the behemoth door you might as well hang a sign on your rex's neck that says PLEASE GRIEF ME because even the lowest level player can easily exploit the AI to kill it.

Carno does a hell of a lot more damage than a raptor, and doesn't have the horrible pathing AI of the raptor when you get off it.

Maybe the Carno isn't better than the Rex (I wouldn't know, haven't got a Rex yet), but these things go in tiers. The Carno is an earlier tier than Rex, accessible at an earlier level, and it's a lot sturdier than a Raptor. You can tank, and kill, a Rex on a Carno, munch through a ton of Brontos and Spinos too. It's stronger, sturdier and can take on a whole horde of Raptors, but on the downside can't jump. It's not about taming a specific dino 'over' another one, as far as I'm concerned, but some dinos are great at certain points in the game and others are great at other points. Maybe once you have a Rex you'll never use your Carno again but that doesn't mean the Carno wasn't great while he was your strongest carnivore.

I was inseparable from my Raptor up until I tamed a Carno, and now I only ever use the Carno, because I never need to freak out when I run into a Rex, no matter what level it is. Once I have a Rex, well, I might end up using it most of the time, but it's just so dang big. Seems to me it will be a bit unwieldy. You can get a Carno through a regular dino door, and you can navigate it through a forest at high speed.

Similarly, I've not touched my Pteradon since I tamed my bird - but the Ptera was still GREAT when I first got it.

Spinos also attack faster than a T-rex making it have more dps
