Sarcos are slow on land, but extremely fast in the water (despite turning like a drunken cow), so movement speed won't help too much. If you're using them for aquatic travel (like they're meant for) you won't really be using them to carry metal or some other heavy stuff, just silica pearls and oil... so carry weight isn't as important. They don't have an oxygen stat, so 'nuff said there.
That leaves them to be an aquatic killing machine... and all three of the stats I named at the beginning are right up that alley. On mine, I'm getting Health to about 2000, stamina up around 7-800, and dumping the rest in melee damage. So far, I can murder entire packs of megaladons.
The other reason to do so is that the base tamed stat affects how much stat you gain per increase.
And Sarco>Megalodon since they can go on land and cuddle you when you sleep.
Edit: I wouldn't set it to aggressive unless you're nearby to watch/help or have a bunch of them tamed and on aggressive as well. At least not until they're mean enough to solo a few brontos at once.
Edit: First up, a bit of health. Get it to 1000 and it will be good for a while. Then get melee up a bit, a bit of stamina, and repeat. I find any dino under 1000 health to be pretty squishy. So far my sarco is at ~1500hp, ~350% melee, and ~500 stamina. I haven't tackled a Bronto with it (I'm a bit of a coward with anything that took me longer than an hour to tame until I'm sure it can handle deadly enemies) but I'm probably getting close. It's only levelled up 20-ish times or so though (got it at 12. Not the greatest starting level, I know..)
Edit: Just up the HP a little bit to around 1k, then start focusing hard into damage, that's what I did atleast, atm I onehit about everything at 600% damage, and 3 hit brontos. It is extremely satisfying swimming up to a bugged group on the beach clicking twice and watching 200+ meat income <:
Mine is lvl 45 now with 2.5k hp 650% damage and some sta atm, cant remember! but around 1k hp and you will be able to handle all dynos except enemy ridden onces :)
