I have higher fortitude than my tribemates and they burn through food/water when we're in caves and I'm usually fine/better off. They usually die/go unconscious from the environment first and they have over 250 health. I have 130 health but my fortitude is 10.
same mine is 10 with 200 hp. I can outlast my tribemate with 300hp and 0 fort.
or, Rather, like Corpratespaz said, it makes the 'extreme' moments consume less (as they are designed to make you consume More)
ive pumped a good chunk into fortitude (around 10 I think?) and it really helps with exploration.
Fortitude indicates the player's ability to resist unconsciousness and environmental effects like Temperature. The default is 0. Each point in Fortitude increases it by 2.

Whether or not a few levels worth of Fortitude is worth it to you is fully up to you, however investing heavily into it is only a waste if your playstyle doesn't fit it. I'm building a full fortitude character right now, and I use a scorpion to handle my land combat and a pteranodon for long range scouting. I spend most of my time exploring while my tribe mates do the fighting, building, and diving, and Fortitude seems to work well for me.
