Offering more options to tame a dino would require two big changes though:
First, taming should be possible even when the dinosaur is conscious. If you want to knock him out so you can take care of him until he likes you, that's fine, but it shouldn't be the only option.
Second, the taming counter should no longer decrease if the dino has no food on him. The taming counter could decrease slowly over time though (if the devs deem this necessary).
Now for some other ways to tame dinosaurs:
1) Help a dinosaur fight off an attacker. If you help a stegosaurus kill an attacking Carnotaurus, the stego should at least like you a little.
2) Feed the dinosaur, even if he isn't unconscious. Dinos should like you if you bring them food!
3) Feeding an unconscious dinosaur should be considered "nursing back to health" and should increase taming too (faster than feeding a conscious dino).
4) Healing an injured dino should increase taming.
5) Just being near the dino should increase the counter very slowly (the dino is becoming familiar with you). That triceratops that always roams around your cabin should start to like you after a (long) while!
6) Restraining/trapping a dino and forcefully riding him (as OP proposed) could be an option too.
Some things should decrease the taming counter as well of course, such as attacking a dinosaur.
The whole point of this would be that taming = getting a dino to somehow become familiar with you and to like you. Nursing him back to health should be one way to do this, but not the only way.
And if baby dinosaurs are ever added to the game, I would propose that they would be a lot easier to tame (they're young, they'll get used to you much more easily than an adult). That way, one strategy could be not to tame an adult, but to somehow capture a baby or an egg.
Of course this would mean changing a lot of things to the taming mechanic, and it would require balancing, but I think it could give more depth to the game and more options to players.
We'll try to determine an analogous system for Carnivores soon, perhaps hunting alongside them.
I like your ideas and I agree with most of them and it made me think of city states in Civ V for some reason. I think there could/should be different affection levels. So we could say 100 is max loyalty level and the current "tamed" status of a dino as it is in game. I'll try to explain it with the examples you've given.
1) Helping to defend a dino could temporarily give you up to a maximum of 10-20 loyalty points depending on how big the threat is which decays over a matter of time, making taming for that time easier.
2) Same as with defending, though being a smaller bonus and decaying slower (the idea being you feeding the conscious dino repeatidly again this will only stack to a certain amount up to, say if you feed it over and over for a long period of time (though the spawn system doesn't really work that way) you could get it to 50ish)
3) Yep, that's pretty much what is in game with exception of the taming decay and it would technically start at a slightly higher affection level depending on previous actions.
4) Yes and at a higher rate than just feeding it.
5) Very slowly and it needs to have a cap to the loyalty level, a fairly low one. I can't just stand next to a dino for 2 months and it's automatically going to follow me around and do my bidding. Let's say ballpark 10 loyalty.
6) Yes this should be a thing, BUT it shouldn't replace the other methods, so there need to be some major down side to thie "quick" way.
A) Aggression towards a dino will decrease the loyalty level (unless it's already tamed) so even if you played nice with a dino, feeding it etc. if you attack it to knock it unconscious it will lose loyalty for you attacking it. Not to 0 but obviously the dino is going to resist taming for you attacking it.
B) Forcefully taming a dino will be possible but it will require effort, meaning you can restrain it (in a cage or forcefully ride it) but if it should get free it will try to kill you.
C) If you manage to supress the dino for long enough (e.g. cage it for a certain period of time) its spirit will be broken and you have successfully forced a level 100 loyalty. (This will take about the same time and - if not more - effort as nursing it back to health though. It shouldn't replace the exisitng method in viability but be a more enganging/hands on approach.
Maybe we can gain "respect" tame points by outrunning them long enough? :)
I do have a feeling that "hunting alongside" might lead to "letting them chase you to a defenseless herbivore" as a useful tactic.
I like variety, but this sounds even more tedious and not fun at atll :-(

Well... we're already hunting alongside them... except that we're the walking bag of meat in their eyes (i love how raptor send u flying when u jump when they bump u). But i'm curious to see how u'll figure it out :) maybe add some kind of repulsive that won't make u as appetizing as we're already are. Or in the contrary, make a kind of "perfume" who will give u the scent of a kind of dinosaur and prevent this kind to attack u.
