As Smikis said, as long as it doesn't reach 0, you'll be fine.
I typically bring a stack of 100 narcs just to be safe. I let torpor drop to about 100 and spam 5 narcs at a time to bring it up by another 200 (I use less if the animal doesn't even have 300 torpor as it's max so I don't waste any narcs) When the tame is nearing completion I'll just use 1 or 2 narcs at a time whenever it drops below 100, sometimes I'll let it drop to 50 before I use another narc. Very little wasted narcotics but also not too close to 0 torpor to be a problem, but it does require vigilant watching.
Also, if it looks like I'll need more food/narcs, I'll spam enough narcs to get the animal's torpor back to its max and head back to base to resupply. Might waste narcs this way, but better safe than sorry.
Also...again, sorry, if you're worried about narcotics, get a crop plot and plant a narcoberry seed. You'll literally get hundreds every day so you can drown in narcotics. Then it won't matter if you waste a few narcs, or even a few dozen. You'll be able to quickly recoup the losses within a matter of hours or days. Faster if you have more than one narcoberry plant.
