What about bunnies?
I'm not really sure where or how they would fit, but what do you all think of having them in-game? I was considering a scary version, larger than what we know of. I also considered basic rabbits for the sake of easy food and hide, but in small quantities. Depending on if it could be done, maybe we could use small animals like this in traps to catch larger beasts.

There is the Nuralagus. A larger than normal extinct bunnies. We could use them for like easier supply for food or something. Or we can use them for something else. Not sure what though.

I think there are plenty of wild life so far but maybe adding mice would be better imo

I wouldn't mind mice either. I was thinking rabbits because they could also serve as a small pet, just because.

Dodos aren't scary either :) It's more about the extra small food source/something to tame for fun. Like I said, just a thought.
