How Do I start Survival of the fittest and play it?

Start the game, choose to join a SOTF game, it will download the mod. After downloading it will move the files into the game directory, during it will continuesly say you are disconected from the server. After this you join a SOTF game again, it will say you need to change to the SOTF mod. You choose yes, than you have the SOTF game opened and you choose a server.

Ohh ye, and the thing will be... all the servers are full :)

Okay.. but how often do new matches start?

the official servers are set to 2 hour games, but from my experience they usually don't last that long.

Just keep hitting refresh and look for ones that are in [Pre-Match] or just list the server name without match status as those have just started a new round. ([Pre match] servers will always appear at the bottom of the list due to alphabetical sorting, so just scroll down to the bottom and spam refresh, it will take you back to the bottom of the list)

Have played several times and only had to wait maybe 5 to 10 minutes for one to open up.

Just make sure you join a tribe or create one right after logging into the server as it was kicking un tribed people the other day
