How to downgrade the game to previous version?
I think that the way I've quit my local game might have caused a bug that prevents it from loading property (riding on an animal that had its saddle changed in the last patch). Does anyone know if there is a way to downgrade to a previous version, so I can load my save game again?

You'd have to replace the content in your steamapps/ARK folder with a "snapshot" of the previous version, so someone you know would have to send you the complete folder (usually internet is no option here and an external HDD or big USB stick is more appropriate). Or you setup something like RSync up with your buddy which will compare each file segments using checksums and only transfer the actual difference (I'd assume even less than the last patch size of 700 MB). Besides from that I have never heard about Steam supporting to "checkout" an older patch version.
steam used to have a function to load specific versions of games, i remember this because it was usable in Europa Universalis 4. Now it has been removed, as i cant seem to find that function anymore, nor is there a function to halt your downloads and still play the game, it requires the download to play it.
IT is up the the developer to leave old versions in the 'beta' tree.

A example of one developer that does this is SCS software makers of
Euro Truck Simulator 2.
If one has issues with their latest version, one simply goes to the steam properties
tab for the game, selects beta tree and finds the older version one wants listed there

So, not a STeam issue so much as something the developer has to enable and maintain.

If a developer happens to stumble across this topic: could you guys pretty pelase add such a tree? :)

You can just configure it in steam options...
