So it's just slower than multiplayer.
EDIT: I wonder if the crops and fertilizer are tied to real time or to the day/night cycle ingame? If it's the latter, you could speed up the passage of time to make gardens come in faster.
I had some trouble when i first started with my seedlings dying, but i think that was a bug they fixed a little while back.
Set up a few plots. Open plot inventory. Add dino doodoo or fertilizer. Add desired seed (certain seeds require larger plots). When you exit the inventory you should see stats when you look at the plot for water, fertilizer, and plant status (seedling/midling/fruitling). The plant status will eventually advance with enough time as long as you stay on top of the water and fertilizer status--I think they might die if they go too long without either. Irrigation will make life MUCH easier, as will fertilizer. Med/large dino droppings will get you a ways for fertilizer too, but i think they'll only go into med/large plots .
So, I have to do this every time I launch the game, if I do not, my Crop Plots die off very quickly.
Note: I made a load a Fertilizer so I could forget about the plots pretty much, 50k Fertilizer and frequent rain should make the plots largely maintenance free, but the bug I experience upsets this.
Note 2: Patch notes from a while back suggested that they fixed this issue - the state of the plot wasn't being saved correctly - but this is not the case for my long-term local game sadly. Possibly it only fixes new games started since that update.

I almost gave up on farming because i'd have to replant everything everytime i got back on.

@Scoob I've reset my game since then. If you're still playing from the same savefile, maybe that's why its not resolved for you? (or they just didn't quash all cirumstances of the bug)

@Scoob Correct, I am no longer having issues with reset. Though, to be specific, I can confirm that the fertilizer issue is fixed for me. I believe the water is okay, too, but it's irrigated and I don't check it right away when i start up the game. (So it's possible the water is resetting but the irrigation just fills it up, but I believe it is fixed as well)
