As of these data - doedicurus is somewhat superior in a tanky way - ankylo deals way more damage and is able to tank, too (just not so well as a doed) - don't know who is faster and who has a bigger problem with stamina (doed has almost double the amount of stamina) - the torpor is enormous of doeds (seems like that should definitly need a nerf/balance)
The Saddle difference is lvl30 doed to lvl40 ankylo - can't say so much to those - doed saddle on lvl35 should be able to do the trick
Ankylo takes less time to tame because it has around 30% less affinity needed to tame as a doedicurus (both have the same food deplete rate [time they need to eat again])
Mammoth has a higher food deplete rate +0.2 but needs around 26% more affinity - the difference of these both stats let the mammoth take 13% less time to tame as a doedicurus
The thing is doedicurus does already has his special move others gonna follow and rebalance that stuff

Doeds take 90% less damage and torpor when curled up.
Solution: never try to tame one with arrows. Use tranq darts... to the head.
edit: If it curls up... stop... wait for it to uncurl. Build a campfire, you're going to be a while.
