Sabers: Fast, average weight, great fighters. They're safe travel mounts at any level as they can protect you and themselves. Saddle adds armor value. Can be found in many places on the map.
Direwolf: Fast, average weight, higher damage than Saber and levels up melee quickly. They're also safe travel mounts at any level. Lacks saddle armor but doesn't lose weight value to saddle weight. Snow biome makes taming these a challenge.

Conclusion: I'd go with a Saber or Direwolf. In my experience, Direwolves gain more points in melee per level than a Saber so I prefer the Direwolf. The Direwolf will be difficult to tame without a flyer due to the dangers in the snow biome, but you can drop it into the volcano or a taming pen if you have an Argentavis or Quetzal.
I personally like my wolf over my saber, but i find myself using my carno more then either.. We just use raptors for eggs at this point
Saber is solid. Takes less damage than a wolf since it wears a saddle meaning more can be out into increasing damage be health. Probably best if your early to mid levels in the game.
Wolf is solid. While I'd has a higher base damage than a saber it also takes more damage requiring higher health which also takes time to regen that health.
Dire Wolves have a minuscule bump in base damage to scale off of but you're not going to notice once you get up to 1k melee damage on either of them.
The survivability between wearing a saddle and not wearing a saddle will, however, be quite obvious once you start getting hit by mobs.
I'd argue for the Dire Wolves if A.I. wasn't so piss poor right now and you could EFFICIENTLY travel about with a few Dire Wolves following you for the buffs of being their Alpha but practically speaking you'll be turning around every 5 seconds trying to lure them out from behind terrain they're stuck in.
So as it stands, Sabers and Dire Wolves are superior to Raptors in practically every way.
Sabers are superior to Dire Wolves in every way except for raw damage.
The small damage increase isn't worth what you'll sacrifice to get it.
