Linux servers run just fine. Given the fact that Linux will run faster as a server and can handle more network connectsion than Windows, I'd go with linux.
As for server configuring managing updating. Editing ini files is not a big deal and helps you to have a better understanding of what's going on. There is a script tool for linux called arkmanager, it is very good and now supports updating your mods as well.
In either case the largest constraint is to have enough free memory for each server instance you run. Expect 8gigs at the least, a well established busy server could use more I would expect.

Anyways the first respondant is giving misinformation.
-No memory leak difference between platforns.
-Arkmanage works on Linux serverd last I heard, but I personally would get this: https://github.com/FezVrasta/ark-server-tools
Your specs are fine. I'd suggest a newer kernel though than Ubuntu 14.02. 4.x kernels have improved auto TCP/UDP tuning from what I was told.
Edit: How many players per server are you expecting? Why would you need 5?
Server 1: 20
Server 2: 90
Server 3: 70
Server 4: 5
Server 5: 30
I'm currently running over multiple dedicated, want to merge to one. So Ive been looking at those specs, might be wrong perhaps it can only take 32 - I've just kinda tried to build in my mind what should be necessary.
I'm just scared the disk and CPU will take too much strain. The memory can always be upgraded I guess.
I can run Ubuntu 15 I guess, no problem...
What are your thoughts, will it work with those players?
I would start with 2 and see how those work out.
Ubuntu 15.10 isn't supported very long. I would look at Debian Stretch beta or Arch.
As its hard keeping good players..
I believe the the offical servers are runnning on 6 core i7 K processors @4+Ghz
They run 3 instances per server.
