And you ideally need 10 AC units all around a 1x1 block to be 100% sure the temperature won't change.
But, to be totally honest, the fact you're asking these questions... tells me you probably aren't ready to breed anything.
How much spare time do you have?
It's a 5hr incubation, and a 9hr handfeed. That means for at least 3hrs you won't even be able to leave it alone to do ANYTHING, not even go to the toilet.
And for a rex you want about 9 fridges FULL of meat.
But in answer to your initial question, each AC that's within a couple of tile squares of the egg will provide the egg with insulation against both heat and cold. Having five of them will provide enough insulation that most eggs will be fine in most any climate, and may be enough in a milder climate, such as on the south end of the island. Having eight will probably guarantee any egg will be fine no matter what. Opinions vary on how many you need -- some people (e.g. upthread) say ten, some say less than eight.
