if it let you, that will say you used a cheat *force tame*, so you can ride each animal without saddle, otherwise no

use instead *to tame*, and it's same as traditionnal taming, also add new animals to your profile ;)

As you already know now, only dire wolves (and Apes) can be ridden without saddles. Sabers need saddles unless you forcetame. All saddles give armor that will make your dino take less damage. The higher tier saddle, the more armor.

For people who actually want an answer on whether to saddle or not to saddle

Saddles give more armor, even if you don't ride an animal it's still good to give them one for armor.
