Valheim has some of what you're asking for and pretty decent customization. Servers are limited due to the way the game plays(many servers have a main for building and 1-2 others for gathering/mining resources because a maps non organic resources do not replenish once mined/excavated. Its a non issue in single player though because you can map hope as you please(its seed(procedurally generated maps). Its a simplistic art style and not high fidelity though and some may not aethetstically like it. Intentionalyl small team and studio making it at their pace and still building it.

Myth of Empires; they settled the case with Snail, as mentioned above it will be coming back to Steam, with Snail as the publisher. One of the odder ways for a publisher to get game, that is for sure.
