Jars hold just as much water.
It's a technical limitation.
But it doesnt take alot to edit them in the ADK and try it to see (or maybe there is a mod that does this already)
I thought (though only from bits and pieces read on the forum, wasn't there as it happened) that the big lag issue with platform saddles was when you put a bronto, on top of a bronto, on top of a bronto, ... which basically meant the top platform saddle was dynamically positioned relative to a dynamically positioned platform that was relative to a dynamically positioned platform that is constantly moving, even as the creature stands still, just from breathing. This I'm sure freaked servers out, and is the reason critters capable of carrying a platform saddle can now no longer get on any kind of platform, rafts included.
My guess with the pipes is that the water pipe system is designed to work with a water intake. Yes, reservoirs can simulate a water intake where no water exists to validate the regular intake, but still, the system as is likely depends at its core code on water requirements for placing them. Since platform saddles move, this would either make it very easy to put the platform carrier near water, build your system, and start walking around with the system either still thinking "I have water access, all is well" which would be very abusable, or it would have to constantly check if it had water access or no (which I imagine is a smaller version of the bronto on a bronto example, and seeing as how rafts have any and all structures on them ghosting whenever they move, I imagine this again could cause serious server load in the right/(wrong) conditions), or they simply say "nope, these do not work on platforms, sorry!"
Currently, the latter seems very reasonable. I certainly hope that when the game moves forward past adding content, and into optimization and polish, that this may be finetuned, same as the AI, the building, ... but right now it is a basic (placeholder?) system that works well enough for this point in time.
My two cents and three guesses, anyway.
The Well is very handy in inhospitable biomes though.
