Well if there isn't enough water to slow your impact you die. Similar to real life. Unlike minecraft

You can survive impact with water, so long as your momentum doesn't make you hit the floor of the river.

Most people carry their partners really high up on birds and drop them into the ocean to dive really deep in one fluid motion.

Well that's how real life works, and currently the only game I know of that does this is GTA V.

While neat, I don't feel like water impact is something that really requires much focus when the waters are often filled to the brim with ♥♥♥♥ that wants to kill you. Piranahas, Megalodons, Leeches, etc.
