Try to take them from behind and aim just above their feet, where their rump is.

I've even bola'd them in midair. You just missed. Ghillie gear and be sneaky snake, or pop a rare flower and run up to it (so it attacks you instead of running).

get a pachyrhino and make the tapejara angry with it and lead it to a trap. that should work. of course, it'll make everything in the area angry, so clear it out beforehand.
