Don't touch food, water or crafting speed. Personally I'd say don't touch oxygen either, but some people would consider that debatable.
For earlygame, I usually get weight to around 200. Since you'll be holding a lot of stuff most of the time, it's more efficient to be able to transport more at a time while you're still getting started.
At lvl 100, drink mind wipe, drink a focal chili soup and pump everything in crafting speed. Put 5 dodo egg in cooking pot and use note to create the ultimate healing food. Then 50 azurberries for the super quenching drink. Then mind wipe to put things normal and leave the recipy in the industrial cooker/cooking pot.
I craft raft to farm levels early on and put them in the water to make a bridge to herbivore island.
also PvP or PvE may affect your choice, but the stats mentioned ae useful for either. At somepoint you may want to up your melee damage for PvP, but it's debateble
Last a lot longer when you can outrun those nasty raptors.
150 weight>150 health>150 stamina>200 oxygen>200 weight>200 health>200 stamina>20 fortitude>120 movement speed.
From now on it depends if I want to live MAINLY in the sea, the jungle or the cold biomes...
But I usually like to have at least 350hp and stamina...
I've gone with 200 a few times and I feel I can sprint for ages with that.
Then again I don't really go swimming often without a pet, so I can see it being helpful there.
With what little stats there is, the system is actually quite flexible for different playstyles.
More water stuff is on my to do list, just very distracted in the desert lately.
I personally go 200 stamina, 12 fortitude, 300 weight (ish), at least double(or)triple my health, then the rest shift across to whatever i feel is hindering my game style as i rank (or) whack fortitude to 30+then divide the rest
crafting speed is just usefull if you have 2 mindwipe tonics and are high lvl to quickly make overpowered recipies
you wont ever need a higher max food or water bar
a fortitude point just gives 2 insulation, thats nothing compared to what you gain from clothing and even with serveral dozends of points on fortitude it wont give you a better chance to survive extrem temperatures, because, as mentioned, its nothing what you gain from your skill points
if you have problem with temperature rather put points on hp

do oxygen only if you spend a lot of time in water, it can be really usefull, because it gives an extrem movement boni while in water.... if you spend most of your time on land like I, oxygenpoints are wasted
damage is only usefull in the very beginning of the game, you will never use it again later because of over-distance weapons and dinos (you could take mindwipe)
stamina is only usefull if you do a lot without dinos, so it can be really usefull for the beginning if you need to run away a lot or gather resources per hand, later stamina will only have a use while diving and while exploring caves
speed is very usefull if you do a lot without dinos and can be a lifesafer in early games, later it is especially usefull during exploration (caves)
if you only move with riding dinos, your own movement speed becomes pointless and a waste

hp is always a good idea, same for weight
Fortitude is a life saver against titanoboa. With 0 fortitude you fall easily with only 1 bite from it. And it affect the rate the torpor fade away. I like to keep it at 20. Some say 80 is the deal but I find it takes too much points away.
yea ok, the whole torpor thing is actually rather good, i usually have some stimulant or stimberries on a hotkey so i dont really need to worry about that though, and 20 fortitude would be 100 hp, looks still kinda wasted to me compared to the hp you could gain
