Creatures I can ride without saddle
I know that some creatures, such as the direwolf and equus, are ridable without a saddle as normal. However, for those creatures that need a saddle, I have found that when I am lacking a saddle (because I don't have the engram, blueprint, or materials) I can still "ride" a trike or bronto by standing on its back and direct using the "go here" command.

I have also observed one person riding a wyvern with TWO PEOPLE standing on the back of the wyvern and not falling off, provided the actual rider doesn't make too sharp of turns or go too vertical up/down. I know that if you own a wyvern there is no saddle since the wyvern doesn't have one.

Besides the trike or bronto, are there other dinos one could "ride" without a saddle? Of course saddles are ultimately preferred in order to not get knocked off.

You can just grapple on and get dragged

I still haven't used a grapple yet in Ark. Can one turn just fine to use the "go here" command? I can imagine using this for the Rex when I don't have a engram/blueprint for it.

You can with flyers, since you dangle.

Maybe a rex, if you can get positioned well.

Anglerfish do not use a saddle.

Just for Fun. You can ride an Ovis without a saddle and if you jump repeatedly it can go really fast.

Grapplinghook on a argent is the way singleplayers get a Q bird if not using backseat from tape.
I just wonder if standing on a turd makes you kind of walk on the water....

Any creature that lets you stand on it should work as you describe in theory. Most of the larger creatures and a number of medium size creatures allow you to stand on them without sliding off. Allosaurus are perhaps the biggest creature that I am aware of that does not let you stand on its back. For flying creatures I know the Quetzal, Griffin and Wyvern all let you stand on them without sliding off.
