How and Where to get clay in desert biome on Lost Island

Is there a place to harvest this stuff?

Or is the only way to make it in mortar and pestle?

Normal way is to make it in mortar and pestle with sand and cactus sap (EDIT: A chemistry workbench crafts it much more quicker).

However, when you get adobe building parts from the loot drops, you can place them, destroy them, then you get clay, too. (EDIT: This is the only way which I know how to "harvest" clay.)

If you have gachas from extinction map, check their production wheel. Some of them can produce clay, too. Download of gachas to Lost Island is possible now.
