I don't know if you can change this specifically for tamed dinos only. How do you expect to level that much anyway? It would take years of farming/mutation breeding.
Trying to do what you are want would require a massive amount of code for custom tame leveling. You could do it but you will need 551 lines of code for each custom level to get from 449 to 1000. With that many levels you also run into the same issue as wild stats rolling over, levels also cap at 255.
How ever note that wild level and levels input by the player are individual values and can both be leveled to 255. Also note while the wild cap is technically 255, you need to stop at 254 because for some reason at 255, it won't allow you to level up that stat.
